Whats This?

This recipe blog is an extension of my original blog Motivation... Determination... Drive. Having been asked numerous times what is involved in paleo eating and the simple question "so... what can you eat?" I have decided to put this collection together. Some of the recipes will be original, and some will be modifications (or replicas) of recipes I have found in cookbooks books or on line. Every recipe listed will be something I have tried, nothing that I think just looks good and want to attempt. Banana Coconut Chocolate Chip Pancakes

I was looking for a good pancake recipe to feed the Little Monster. This one fit the bill and what better way to start a Sunday than with Chocolate Chip Pancakes!! It was his first... of probubly many... experiences with chocolate chip pancakes! Mama (me) loved them growing up and still loves them to this day!!

Recipe: Banana Coconut Chocolate Chip Pancakes

Ingredients:
3 Eggs
1/4 C Coconut Milk (you can use almond)
1 tsp Vanilla
1 tsp Agave (recipe calls for honey but I used agave because I fed them to Z)
2 tbsp Coconut Flour
1/3 C Almond Flour
1/2 tsp Baking Soda
1/4 tsp Salt
1 Banana

Directions:
Her directions on the website are a little more extensive than mine… I just tossed everything above into my Ninja with the paddle attachment and gave it a whirl. Let the batter sit for 5 minutes to get a little thicker and you are ready to go.

I used my tabletop griddle and made all 6 pancakes at once. I suppose I could have made them a bit smaller and a few more of them. Once the edges got bubbly I added some chocolate chips and flipped. You can also add banana slices at that time too.


They were a little messy flipping and I thought they burned because they got a little dark, but they tasted amazing and the Little Man certainly approved!!

Paleo Banana Nut Chocolate Chip Mini Muffins

If these tasted as good as they smelled when they where baking I knew I was going to have a big hit on my hands! Always looking for a yummy bite size snack that is delish and not filled with sugar.

I made these for week number three of the Open 2014 for CrossFit Wachusett. Cant wait to see how much everyone likes them.

The original recipe is HERE. They made 9 large muffins with the recipe. I wanted to make mini muffins to share with the gym peeps... plus I think its more fun to have bite size goodies!! The recipe mad 48 mini muffins.

I put the recipe into My Fitness Pal and this is the result of one mini muffin:  Cal. 63, Carb 8g, Fat 4g, Protein 2g.

What You Need:
3 Bananas
3 Eggs
1/4 C Maple Syrup
1 Tsp Vanilla
1/2 C Almond Butter (I used salted)
1/4 C Coconut Flour
1/4 Tsp Cinnamon
1/2 Tsp Baking Soda
1/2 Tsp Baking Powder
Chopped Walnuts (however much you want)
Enjoy Life Mini Chocolate Chips (however much you want)

What You Do:
- Preheat Oven to 350
- Mash bananas with a fork so they are still slightly chunky
- Add eggs, syrup, almond butter and vanilla and  mix with hand mixer
- Sift coconut flour into mix than add cinnamon, baking soda and baking powder and hand mix together
- Add chocolate chips and walnuts, I grinded my walnuts in the food processor to make them really small
- Use mini muffin cups or coat the inside of a mini muffin tray with coconut oil (really really well)
- Fill cups/tin with a tablespoon each of batter
- Bake for 10 minutes (or until a toothpick comes out clean), leave in pan to cool to touch and than flip out of pan onto cooling rack.

Chocolate Chip Cookie Dough Bites

Week one of the Open 2014 I brought this tasty treat to CrossFit Wachusett to share! They went over pretty well so I thought I would repost the recipe.

The original recipe is from HERE... seriously, check out this amazing food blog. Its called "Living Healthy with Chocolate," I mean, how can you go wrong with that!?!? Of course be careful with the word "paleo" as the chocolate is not exactly 100% paleo and dependant on the brands and types of ingredients you use. 

Also, I doubled the recipe that is listed on the website link because I was making them for a large group. I divided the pan up into 60 small servings. I put the recipe into My Fitness Pal and this is the result of one serving:  Cal. 103, Carb 5g, Fat 8g, Protein 2g.

What you need for the Base:
2/3 C. Pecans
1 C Almond Flour
8 Tbsp Cacao Powder
10 Pitted Dates
1 Tsp Vanilla
1 Tbsp Melted Coconut Oil

What you need for the Top:
1/2 C. Melted Coconut Oil
6 Tbsp Full Fat Coconut Milk
3 Tsp Vanilla
2 Tbsp Honey
3 C. Almond Flour
1 C. Enjoy Life Chips

What You Do:
- In a food processor grid up pecans, put them in a small bowl and set aside
- In the same food processor grind up dates (with no pits) into a paste, might need to add a little water to get it to loosen up.
- In a bowl using a spatula mix together the pecans with almond flour, cacao powder, dates, vanilla and coconut oil. This is not an easy process and will look like it is going to take forever to come together. Don’t add more water just keep working it, it will happen.
- Line a 13X9 pan with parchment paper and press the mixture into the bottom. Set it aside
- Mix together coconut oil, coconut milk, vanilla and honey in a large bowl.
- Add almond flour, do not over mix
- Fold in chips.
- Spread “cookie” over base and refrigerate for at least an hour.
- Enjoy!

Banana Almond Bites


These are fantastic. I had to alter the original recipe a bit since we don’t eat peanut butter… also I make them in mini muffin cups because I couldn’t get them out of the tin. They are wonderful when they are frozen!!
*Disclaimer: though the chocolate chips are dairy, nut and soy free they are not considered totally Paleo, so if you are doing a Paleo Challenge or staying completely 100% Paleo this recipe will cost you points.*

What you need:
- 1 ripe banana
- 3/4 cup almond butter (I use Trader Joes with Sea Salt)
- 2 tablespoons honey
- 3/4 teaspoon vanilla
- 2 1/4 teaspoon coconut oil, melted
- Half bag of Enjoy Life Chocolate Chips

What you do:
- Mix everything but the banana together (I used my Ninja for this and it worked like a charm)
- Fill mini muffin tin with liners
- Cover the bottom with a thin later of batter
- Add a slice of banana
- Cover banana with batter
- Put in freezer for half an hour
- Melt half a bag of chocolate chips on stove top
- Dollop chocolate on each almond butter cup and return to freezer until serving
These guys melt fast so they should be kept in the fridge when not being eaten.

Paleo Eggless Protein Bars

Ok... so I used a whole bunch of recipes as "guidelines" for this one... but I am so so so excited I came up with it on own! I needed a solution to replace my egg muffins in the morning at work that contains enough protein to get me through till lunch. I looked for "egg free" protein bars, but most contained oats and grains, than I looked for "paleo protein bars" and most contained eggs... so whats a girl to do.

Well, come up with a solution on my own!! I know how to bake (these are no bake though) but I am much more comfortable with these types of ingredients than I am with savory ones.

I cant wait to have them this week!! They came out fantastic!!

What you need:
- 2 Cups Sliced Almonds
- 1/2 Cup Shredded Coconut
- 1/2 Cup Almond Butter (I used salted Trader Joes)
- 1 Cup Vanilla Protein Powder
- 1/4 Tsp Salt
- 1/2 Cup Coconut Oil
- 1 Tbsp Vanilla
- 1 Tbsp Agave
- 1 Cup "Enjoy Life" Soy Free, Dairy Free, Nut Free Chocolate Chips


What you do:
- Melt coconut oil in a small sauce pan.
- At the same time combine almonds, coconut, and almond butter in a food processor, blend
- Transfer to bowl (or if you have a large enough food processor I suppose you could keep it in there) and add protein powder and salt than mix with hand mixer
- At this point the coconut oil should be done melting, add vanilla and agave
- Mix into nut mixture
- Press mixture into 8X8 Pan
- Let refrigerate for an hour
- Melt 1 cup of chocolate chips over really low heat (mixing constantly)
- Pour over chilled bars
- Return to fridge for another 20 minutes and they should be ready to serve!

I had Hubs test when he got home from the gym... he said they were fantastic! So proud of myself!!

Paleo Banana Chocolate Chip Pancakes

These have to be my FAVORITE breakfast!!

They were the first Paleo breakfast we tried and we make them a lot!! Got the original recipe HERE.

*Disclaimer: though the chocolate chips are dairy, nut and soy free they are not considered totally Paleo, so if you are doing a Paleo Challenge or staying completely 100% Paleo this recipe will cost you points.*

What you need:
- 1/2 Cup Almond Butter
- 1 Ripe Banana
- 2 Eggs
- 1 Tsp Vanilla
- Enjoy Life Chocolate Chips
- Dash of  Cinnamon


What you do:
- Preheat griddle to 350 degrees
- Slice up banana really thin (which makes it easier to mix)
- Mix everything else together except for chips
- Make pancakes in a size you desire and sprinkle chips onto each on right away
- Cook as you would a "normal" pancake, let the edges bubble, than flip.

ENJOY! They are sooooooo yummy!!

Paleo Pumpkin Pecan Pancakes

We love pumpkin at this house and fall is the best time for that pumpkin flavor. We found this recipe and wanted to try it right away!! They came out great... and the second time I made them I threw in some Enjoy Life Chocolate Chips (which are gluten free, dairy free, peanut free, tree nut free soy free, egg free and casein free) I had in the freezer leftover from when I made brownies. They were so good!

What you need:
1/2 C pumpkin puree, organic, unsweetened
1/2 C almond butter
1/4 C chopped pecans, toasted
2 eggs
2 T honey
1 T vanilla
1 tsp. cinnamon
1/4 tsp. fresh ground nutmeg
(chocolate chips if you have them)
What you do:
Preheat grill to 350 degrees
Mix everything together
Pour on grill and let cook for about 2 minutes
Flip (be careful, the nuts make the pancakes heavy so they arent that easy to flip)
Cook of the other side for 2-3 more minutes
Serve...
 


 
 

Paleo Blueberry Banana Brownies

These are soooo good! I got the recipe at www.civilizedcavemancooking.com/2011/04/blueberry-banana-brownies.html.  I have used both Light and Regular Agave, and the second time I made them I used a whole bag of chips rather than just one cup. I was also told by someone else who made them that you can substitute the agave with honey. You can also leave out the blueberries... or substitute with another fruit... be creative!

What you need:
2 Cups Almond Butter
2 Eggs
1 Cup Agave Nectar
1 Tbsp Vanilla
1/2 Cup Cocoa Powder
1/2 Tsp Sea Salt
1 Tsp Baking Soda
1 Cup Enjoy Life Chocolate Chips
1/2 Cup Dried Blueberries
1 Ripe Banana



What you do:
- Preheat oven to 350
- Blend almond butter till smooth
- Blend in eggs
- Blend in agave and vanilla
- Blend in salt and baking soda
- Slowly blend in cocoa powder
- Hand mix blueberries and chips
- Slice up banana into really thin pieces and hand mix
- Use coconut oil to grease 13X9 Pan
- Bake 35-40 min (test with toothpick)
