Whats This?

This recipe blog is an extension of my original blog Motivation... Determination... Drive. Having been asked numerous times what is involved in paleo eating and the simple question "so... what can you eat?" I have decided to put this collection together. Some of the recipes will be original, and some will be modifications (or replicas) of recipes I have found in cookbooks books or on line. Every recipe listed will be something I have tried, nothing that I think just looks good and want to attempt. As a disclaimer, I will not take credit for those found at other sources, if you are to use one listed with a link attached please give credit to the original site. Thank You and happy eating!!

Paleo Chicken Fingers


This was found at http://fedandfit.com/2012/01/13/paleo-chicken-fingers/ ... they were PERFECT for the first quarter of the Pats game!! We want to figure out how to get them a little crispier, but the breading had great flavor!! Good Stuff!! 

We served them with Tomato Mayonnaise.

What you need:
3 chicken breasts cut into strips
2 eggs
1 1/2 cups almond meal
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tsp paprika
1 Tsp salt
1 Tsp pepper


What you do:
- Preheat oven to 375
- Line a baking sheet with and place wire baking racks on top
- Wisk eggs in small bowl
- Mix almond meal, garlic powder, onion powder, paprika, sea and pepper in a small bowl
- Coat chicken in mixture
- Dip in eggwash
- Second coat in almond meal
- Put on baking rack
- Bake 20 minutes
- Turn up to 400 deg and bake an additional 5 minutes
- Let stand 10 minutes, than serve!
 






Paleo Pumpkin Goodness Bars

What you need:
2 Cups almond flour
1 tsp baking soda
1 tsp pumpkin pie spice
2 tsp cinnamon
1/3 cup coconut oil
1/3 cup honey
1 can pumpkin puree
1 tsp pure vanilla
2 eggs
2 handfuls of crushed pecans


What you do:
- Preheat oven to 375
- Heat coconut oil and honey on low heat (or in the micro)
- Combine everything but the nuts and mix until 

 
- pour batter into 8x8 pan (I would suggest lightly greasing it with coconut oil)


- Sprinkle nuts over 


- Bake 20-30 minutes
- Let cool than refrigerate


Paleo Banana Bread Muffins

Original recipe comes from Robb Wolfe, http://robbwolf.com/2011/04/21/recipe-paleo-banana-bread/, I tried it first as a loaf, but prefer the muffins. This makes 15 muffins.

What you need:
- 2 cups almond flour
- 1/4 cup flax seed meal
- 2 tsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 2/3 cup pecans
- 4 really ripe bananas
- 2 tbsp honey
- 4 eggs
- 1 tsp vanilla

 
What you do:
- Preheat oven to 375
- Mix all the dry ingredients in a large bowl
- Mash bananas in a food processor or masher
- Mix all wet ingredients together with bananas in a separate bowl from dry

 
- Make a well in the dry ingredients, add wet ingredients and fold together

 
- Grease muffin pan with coconut oil
- Fill each muffin about 3/4 of the way up

 
- Bake for 20-25 minutes (or until toothpick is clean)

Strawberry Muffins

This is lovely treat was brought to the gym this morning for all of us to try! They were absolutely delicious… yummy sweetness from the strawberries. Definitely a MUST TRY recipe!!

What you need:
½ cup coconut flour
1 tablespoon arrowroot powder
¼ teaspoon celtic sea salt
½ teaspoon baking soda
4 large eggs
½ cup agave nectar
1 tablespoon vanilla extract
½ cup finely chopped fresh strawberries

What you do:
- Preheat oven to 350
- Combine dry ingredients in large bowl
- Combine wet ingredients in small bowl
- Add wet into dry slowly and mix with mixer
- Fold in Strawberries
- Fill 8 (lined) muffin cups
- Bake 20-25 min

Paleo Coffee Cake

I got this recipe here… http://paleoninjas.com/2011/09/06/paleo-coffee-cake/, I made it for Christmas morning at my parents house. It came out ok... I know I want to heat the coconut oil a little less for the topping next time... practice makes perfect on this one!

What you need:
Cake
1/2 cup coconut milk
2 eggs
1/4 cup raw honey
1 tsp vanilla
2 cups almond flour
1/2 cup arrowroot powder
1/2 tsp baking soda
1/2 tsp salt

Topping
2 tbsp cinnamon
1/4 cup coconut oil
3 tbsp honey

What you do:
- Preheat oven to 325
- Mix all dry ingredients in large bowl
- In smaller bowl mix wet ingredients
- Slowly mix wet into dry
- Pour into 8X8 pan greased with coconut oil
- Mix topping ingredients, and swirl with a knife into cake
- Bake 25-20 minutes

Paleo Bacon Slaw

Original recipe is here, http://cfscceat.blogspot.com/2011/08/paleo-bacon-coleslaw.html. I use more oil and vinegar when I make it, so I included my quantities. Came out delicious. I love coleslaw and the extra little zing from the dijon mustard was great (and of course there is BACON in it!)

What you need:
- 1 Head of Cabbage (I use a mandolin to shred it as thin as I can)
- 2 Carrots Shredded
- 1 Red Onion (I use the mandolin for this as well)
- 6 Strips of Bacon
- 1 Tbsp Dijon Mustard
- 1 Tbsp Honey
- 1 Cup Apple Cider Vinegar
- 1/4 Cup Olive Oil
- Salt and Pepper

What you do:
- Cook bacon until crisp, reserve bacon fat for later
- Combine shredded cabbage, onion and carrots in a large bowl
- In a separate bowl combine mustard, honey, vinegar, olive oil, 2 Tbsp bacon grease, salt and pepper
- Crush up bacon into small pieces and add to cabbage
- Pour dressing onto cabbage and bacon mixture and mix well  

Dried Apples and Pears

Simple snack... have a lot of fruit you need to do something with before it goes bad... this is a great idea and way less expensive than buying it already dried!

What you need:
- Apples
- Pears

What you do:
- Slice with mandolin (or by hand) into 1/4" thick slices
- Arrange in food dehydrator with ample space between each piece
- Let dehydrate for 12 hours
- They are done when you break one and no moisture beads appear (should be bendable not crisp)
- Store in sealed plastic bag for up to a year

Paleo Eggless Protein Bars

Ok... so I used a whole bunch of recipes as "guidelines" for this one... but I am so so so excited I came up with it on own! I needed a solution to replace my egg muffins in the morning at work that contains enough protein to get me through till lunch. I looked for "egg free" protein bars, but most contained oats and grains, than I looked for "paleo protein bars" and most contained eggs... so whats a girl to do.

Well, come up with a solution on my own!! I know how to bake (these are no bake though) but I am much more comfortable with these types of ingredients than I am with savory ones.

I cant wait to have them this week!! They came out fantastic!!


*Disclaimer: though the chocolate chips are dairy, nut and soy free they are not considered totally Paleo, so if you are doing a Paleo Challenge or staying completely 100% Paleo this recipe will cost you points.*


What you need:
- 2 Cups Sliced Almonds
- 1/2 Cup Shredded Coconut
- 1/2 Cup Almond Butter (I used salted Trader Joes)
- 1 Cup Vanilla Protein Powder
- 1/4 Tsp Salt
- 1/2 Cup Coconut Oil
- 1 Tbsp Vanilla
- 1 Tbsp Agave
- 1 Cup "Enjoy Life" Soy Free, Dairy Free, Nut Free Chocolate Chips


What you do:
- Melt coconut oil in a small sauce pan.
- At the same time combine almonds, coconut, and almond butter in a food processor, blend
- Transfer to bowl (or if you have a large enough food processor I suppose you could keep it in there) and add protein powder and salt than mix with hand mixer
- At this point the coconut oil should be done melting, add vanilla and agave
- Mix into nut mixture
- Press mixture into 8X8 Pan
- Let refrigerate for an hour
- Melt 1 cup of chocolate chips over really low heat (mixing constantly)
- Pour over chilled bars
- Return to fridge for another 20 minutes and they should be ready to serve!

I had Hubs test when he got home from the gym... he said they were fantastic! So proud of myself!!
